DAY THREE

This morning for breakfast I heated up some leftover curry vegetable soup that I made last week.  Basically I threw in all my "getting ready to go bad" veggies in a pot, some vegetable stock and lots of curry.  After it simmered away for an hour or so, I hit it with the immersion blender and a cup or two of whole milk.  Amazing.  I think this soup had onions, celery, carrots, a potato, broccoli, cauliflower, mushrooms, and a few asparagus stalks.  It was pretty tasty.

I had to work today, so I packed a few snacks that would get me through until dinnertime.  Normally I would be home by 2, but I had to take the H.O.A.E at the local community college so I got home right around dinner time.  For my 11:30 snack I had...

-2 TBSP Hummus (No, that is not a typo....I really did measure out 2 tablespoons!)


I skipped my 1:30 meal because I was in the middle of the exam, so at 3:30 I had...


-1 Apple
-2 TBSP crunchy peanut butter

After I picked up the boys, I remembered that my friend had given me a coupon for a free large pizza from Papa Murphy's.  So I ordered a "deLITE" crust with light sauce, extra veggies (onions, peppers, mushrooms, olives, sun dried tomatoes) pineapples, herbs and a sprinkle of feta cheese.   It was fantastic.  

-3 slices (3 out of 8 ain't bad......considering I could have easily eaten the entire thing)  

I quickly bagged up the leftovers and put them in the refrigerator.  If I had let it sit out any longer I would have eaten more.  

As for my daily goals.  I did NOT walk the full 5 miles.  I easily got in three miles before I even got home from work and the three hour exam, but I was lazy and did not hop on the treadmill.  Maybe I'll make up those two miles tomorrow.  Maybe even jog for a few min.  Maybe.   :)

  1. don't beat yourself up about not hitting the treadmill. i'd say you did pretty good getting in 3 miles . . . not bad for your rest day!

    and i'm proud of you for measuring out that hummus! i know that'll be a constant challenge for you, you hummus lover!

    pizza . . . mmmmmmm! i could go for 3 slices of 'za right now!!

    how did your exam go? was it a placement exam?

    Kel, it was basically veg on a cracker with a little feta...you would have loved it!

    It was the Health Occupations Aptitude Exam. Basically, it was a waste of 3 hours and $25 reg fee. Haha. I'm in the program no matter what, it might actually get dropped if enough people don't participate. Ugh. But it went well...thanks kel!
